There are three main coffee processing methods: natural, washed, and honey. A naturally processed bean is allowed to fully dry inside of the coffee cherry before removing it. A washed processed bean is completely removed from the cherry and washed thoroughly before drying. The honey process is a hybrid of these two methods. The bean is removed from the cherry, but allowed to ferment and dry with the sticky musilage from the cherry (which looks like honey) on its surface before final processing. This honey process allows the bean to absorb more fruit flavor from the cherry (similar to natural) while maintaining a clean mouthfeel and lighter body (similar to washed).

Mount Elgon is a massive peak split nearly in two by the border of Uganda and Kenya. The “mountain” itself is more an enormous expanse of successive plateaus that float dramatically above the surrounding valley floor.
